Ingredients

  • 2 tablespoons olive oil
  • 4 pieces medium sized chicken egg
  • 1 piece medium sized onion, finely diced
  • 2 pieces garlic cloves, minced
  • 1 piece green bell pepper, finely diced
  • 2 pieces tomato, peeled and diced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon chili flakes (optional)
  • 6 tablespoons cream cheese spread
  • salt and pepper to taste
  • fresh coriander, chopped (for garnish)

Directions

    Heat a skillet on high heat with 2 tablespoons of olive oil. Sauté the onion and minced garlic for 1 minute, then add the bell pepper and stir to combine.

    Stir in the diced tomatoes and tomato paste, cooking for about 5 minutes until the mixture thickens slightly.

    Add cumin, paprika, coriander, and chili flakes. Season with salt and pepper, then reduce the heat and let the sauce simmer gently for another 5 minutes.

    Use the back of a spoon to create four small wells in the sauce, then carefully crack an egg into each well.

    Cover the skillet and lower the heat. Cook the eggs for 6–8 minutes, or until the whites are set and the yolks reach your desired consistency. (Cook longer if you prefer firmer yolks.)
